Instructions

  1. Prepare the Frying Oil: Add 4 to 6 cups of oil to a medium to large saucepot over medium-low heat. Monitor the temperature until it reaches and maintains at 375° Fahrenheit.
  2. Mix Wet Ingredients: In a large bowl, combine the eggs, milk, melted butter, and vanilla. Whisk them together until fully blended and set aside.
  3. Combine Dry Ingredients: In a separate medium bowl, whisk together the flour, sugar, baking powder, and salt until evenly mixed.
  4. Make the Batter: Gradually add the flour mixture to the wet ingredients in three batches, vigorously whisking until smooth before adding the next batch.
  5. Prepare for Frying: Transfer the smooth batter into a large squeeze bottle with a wide opening. Alternatively, a water pitcher can be used to pour the batter through a funnel directly into the hot oil.
  6. Fry the Funnel Cake: Using a zig-zag circular motion, squeeze about ¾ cup of batter into the oil, overlapping strands to form a large circle. Cook for 90 seconds or until lightly browned, flip, and cook for an additional 30 seconds.
