Description

Ingredients

4 large ripe steak tomatoes, chopped
1 jalapeño pepper, seeds removed, stem discarded
1 shallot
½ green bell pepper
1 green onion
½ cup fresh cilantro
2 garlic cloves
2 teaspoons cumin
2 tablespoons fresh lemon juice
Salt and pepper, to taste


Instructions

In a food processor, add the tomatoes, jalapeño, shallot, green pepper, green onion, cilantro, garlic, cumin, and lemon juice.
Pulse until all ingredients are finely diced and well combined. Be careful not to over-pulse to maintain a salsa consistency instead of a soup-like texture.
Taste and adjust salt and pepper as desired.
Transfer to a serving bowl, cover, and refrigerate. This salsa will keep for about 5 days in the fridge. Serve chilled with tortilla chips or as a fresh topping for tacos, grilled meats, or salads. Enjoy!
