This Garlic Broccoli Stir Fry is a quick and flavorful dish that’s perfect for a busy weeknight dinner. The combination of fresh broccoli, hearty chickpeas, and aromatic garlic and ginger creates a satisfying meal that’s both nutritious and delicious. The spices add a warm, comforting depth, while the homemade sauce, made from soy sauce, rice vinegar, and a hint of sweetness, brings everything together beautifully.

For the Broccoli Stir Fry:
1 tablespoon oil (*see recipe notes)
1 onion, diced
5 garlic cloves, minced
1 heaped tablespoon fresh ginger, minced
1 teaspoon onion powder
1 teaspoon paprika
½ teaspoon smoked paprika
Black pepper & sea salt, to taste
Pinch of cayenne pepper
1 medium head of broccoli (450 g), cut into small florets
⅓ cup (80 ml) vegetable broth
1 (15 oz) can chickpeas, rinsed and drained
Cooked rice of choice, for serving
For the Sauce:
½ cup (120 ml) water
3 tablespoons soy sauce (gluten-free if needed)
2 tablespoons rice vinegar or balsamic vinegar
2 tablespoons maple syrup or any other sweetener
1 tablespoon cornstarch


Instructions

Heat the oil in a large pan over medium heat. Add the diced onion, minced garlic, ginger, and all spices (onion powder, paprika, smoked paprika, black pepper, sea salt, and cayenne pepper). Sauté for 3-4 minutes until the onions are translucent and the spices are fragrant.
Add the broccoli florets and vegetable broth to the pan. Stir-fry until the broccoli is tender but still crisp, about 10 minutes.
While the broccoli is cooking, prepare the sauce. In a medium bowl, whisk together the water, soy sauce, vinegar, maple syrup, and cornstarch until smooth.
Pour the sauce into the pan with the broccoli and add the chickpeas. Bring the mixture to a boil, then reduce the heat and let it simmer for a few more minutes until the sauce thickens and coats the vegetables and chickpeas.
Taste and adjust the seasonings as needed, adding more salt, pepper, or cayenne pepper if desired.
Serve the stir fry hot, either on its own or over your choice of cooked rice. Enjoy!
