Ingredients

1.5 pounds sirloin steak (or use ribeye, strip steak, or another tender, well-marbled cut)
Salt & pepper, to taste
1 tablespoon olive oil
4 tablespoons butter (1/2 stick), divided
45 cloves garlic, minced
1 tablespoon fresh parsley, chopped


Instructions

Prep the steak:
If possible, take the steak out of the fridge and let it come to room temperature for about 30 minutes before cooking.
Cut the steak into 1-inch cubes and season generously with salt and pepper.
Cook the steak bites:
Heat a skillet over medium-high heat and add the olive oil and 1 tablespoon of butter.
Once the pan is hot, add the steak cubes in a single layer, making sure not to crowd the pan (cook in two batches if needed).
Cook the steak bites for about 2 minutes on one side, then flip and cook for another 2 minutes to achieve a medium doneness. Adjust the timing if you prefer a different level of doneness.
Once the first batch is done, transfer the steak bites to a plate and repeat with the second batch.
Make the garlic butter sauce:
Reduce the heat to medium-low. Add the remaining butter and minced garlic to the pan.
Stir constantly for 1-2 minutes until the garlic is fragrant and cooked, but be careful not to let it burn.
Combine and serve:
Remove the pan from the heat and add the steak bites (and any juices from the plate) back into the pan. Toss the steak in the garlic butter sauce.
Serve immediately, garnished with fresh parsley.
