Ingredients
12 frozen unbaked yeast rolls, thawed but still cold
4 Tbsp unsalted butter, melted
2 Tbsp grated Parmesan cheese
1 Tbsp fresh parsley, finely chopped
1/2 tsp dry Italian seasoning
2 medium cloves garlic, minced
1/2 cup shredded cheddar cheese (or colby jack/mozzarella)
36 1/2 inch cubes colby jack cheese
Instructions
Brush the bottom and sides of a 12-count muffin tin with some melted butter. Set aside the remaining butter.
Allow rolls to sit at room temperature for about 15 minutes, until thawed but still cold.
Flatten each roll into a 3-inch round on a nonstick surface. Place 3 cheese cubes in the center, then bring the edges together and pinch to seal.
Place seam side down in the muffin tin. Repeat with all rolls. Cover with a damp cloth and let rise for 1 hour, or until doubled in size.
Preheat oven to 375°F. Melt the remaining butter and mix in Parmesan, parsley, Italian seasoning, and minced garlic. Brush this mixture over the tops and sides of the rolls. Sprinkle with both Parmesan and shredded cheese.
Bake for 18-22 minutes, until puffed and golden. Serve immediately.
