- 1-3 tablespoons crushed red pepper flakes, to taste ๐ถ๏ธ
- 1 tablespoon Korean chili flakes (Gochugaru) (optional) ๐ถ๏ธ
- 1/2 teaspoon paprika ๐ถ๏ธ
- 1/4-1/2 teaspoon cayenne pepper, to taste ๐ถ๏ธ
- 8 ounces rice noodles ๐
- 2 bell peppers, thinly sliced ๐ถ๏ธ
- 1/3 cup tamari or soy sauce ๐ฅข
- 1/3 cup chopped fresh cilantro ๐ฟ
- 1/4 cup chopped fresh Thai or regular basil ๐ฟ
- 1/4 cup chopped fresh green onions ๐ฑ
Instructions:
1๏ธโฃ Prepare the Aromatic Oil:
In a medium skillet, combine the sesame oil, finely chopped garlic, thinly sliced shallots, and a bay leaf. Cook this mixture over medium heat until the garlic turns a golden hue and begins to crisp, about 5-8 minutes. The aroma will be incredible! Stir in the sesame seeds and grated ginger, cooking for just a minute more to release their flavors. ๐ณ
2๏ธโฃ Infuse the Chili Oil:
Once your garlic mixture is ready, pour the oil into a large heatproof bowl. Add the crushed red pepper flakes, optional Korean chili flakes, paprika, and cayenne pepper. Season with salt to taste. You can use all of this flavorful oil for your noodles, or reserve some to drizzle on top when serving. ๐ถ๏ธ
3๏ธโฃ Cook the Noodles and Veggies:
While your oil is infusing, cook the rice noodles according to the package directions. In the last 3 minutes of cooking, toss in the thinly sliced bell peppers to soften them slightly. Before draining, reserve 1/4 cup of the cooking water. Drain the noodles and peppers, then immediately toss them in the bowl with your chili oil mixture, tamari or soy sauce, and all the fresh herbs. Add the reserved cooking water as needed to reach your desired sauce consistency. ๐
4๏ธโฃ Serve and Enjoy:
Divide the noodles among your bowls, garnishing with any additional chili oil and a sprinkle of fresh green onions. These noodles are best enjoyed immediately, soaking in all the spicy, aromatic flavors. ๐ฟ๐ถ๏ธ
