11/2 lbs. turkey breast cutlets, 1/2 inch sliced
11/2 cups chicken or turkey bone broth
1/2 cup white wine
4 garlic cloves, minced
3 sprigs fresh rosemary, picked and chopped
3 sprigs fresh thyme, picked and chopped
3 sprigs oregano, picked and chopped
Additional herbs for the sauce, if desired
2 Tbsps extra virgin olive oil
Sea salt and fresh ground black pepper, about 1/4 teaspoon each


Instructions

In a small mixing bowl, combine minced garlic, 1 tablespoon olive oil, chopped herbs, sea salt, and pepper to prepare your marinade/rub.
Generously rub the mixture all over the turkey cutlets. Marinate for 30 minutes or overnight in the fridge.
Heat a skillet over medium-high heat; add 1 tablespoon olive oil and heat until simmering.
Sear marinated turkey on each side until golden brown, being careful not to overcook.
Once cooked, transfer cutlets to a plate. In the same skillet, add wine and reduce. Scrape the brown bits with a wooden spatula.
Stir in broth and simmer until reduced and slightly thickened. Add extra herbs if desired.
Return turkey to the skillet, coat with the sauce, and heat through.
Serve turkey cutlets hot, spooned with sauce.
