  • 1 tablespoon olive oil
  • 1 ½ tablespoons butter, divided
  • 1 pound (450 grams) raw shrimp, frozen, peeled, and deveined
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon Old Bay seasoning (optional), smoked paprika, or cajun
  • 1 clove garlic, minced
  • ½ cup (120 ml) heavy cream (double cream in the UK)
  • ½ cup (40 grams) parmesan, grated
  • ¼ cup fresh parsley, chopped

Instructions

  1. Step 1: Cook the Pasta In a medium-sized saucepan, bring water to a boil and add a generous amount of salt. Cook the linguine pasta according to the package instructions until al dente. Reserve 1 cup of the pasta water and then drain the rest.
  2. Step 2: Prepare the Shrimp Heat 1 tablespoon of the butter along with the olive oil in a skillet over medium heat. Add the shrimp and briefly cook for about a minute. Season with salt, pepper, and your choice of seasoning (Old Bay, smoked paprika, or cajun). Continue cooking until the shrimp turn pink, taking care not to overcook. Transfer the shrimp to a plate and set aside.
  3. Step 3: Make the Sauce In the same skillet, add the remaining butter and the minced garlic, sautéing until fragrant (about 30 seconds). Pour in the heavy cream and deglaze the pan, scraping up any flavorful bits. Add the grated Parmesan cheese and stir until melted. Slowly add some of the reserved pasta water to achieve your desired sauce consistency. Allow to simmer for about a minute.
  4. Step 4: Combine and Finish Toss the cooked linguine in the sauce until every strand is nicely coated. Return the cooked shrimp to the skillet and gently reheat in the pasta. Finish by sprinkling chopped fresh parsley over the dish before serving.
