Ingredients
Roasted garlic:
2 heads garlic
1 tablespoon olive oil for roasting
3 tablespoons olive oil for serving
Mashed potatoes:
3 pounds Russet potatoes (or Golden Yukon, peeled and quartered)
1.5 cups heavy cream
1 cup Parmesan cheese, shredded
4 tablespoons butter, salted
¼ teaspoon salt
3 tablespoons fresh thyme
Freshly ground black pepper
Instructions
Roast garlic:
Preheat oven to 400°F.
Slice off the top portion of the garlic heads and discard loose leaves.
Place garlic heads on a piece of foil, drizzle with 1 tablespoon olive oil, and wrap with foil.
Roast for 45 minutes. Once cool, squeeze out the garlic cloves and mix with 3 tablespoons of olive oil in a small bowl.
Mashed potatoes:
While garlic roasts, peel and quarter potatoes. Place in a large pan with cold water covering 1-2 inches above the potatoes.
Bring to a boil and cook on high heat for 15-20 minutes until tender.
Drain well and mash in a large bowl.
In the same pan, heat heavy cream, then add mashed potatoes, Parmesan cheese, butter, and salt. Stir over low-medium heat for about 5 minutes.
Season with thyme and black pepper. Adjust salt as needed.
