Ingredients:

  • 2 tablespoons unsalted butter or ghee 🧈
  • 1 medium onion, finely diced (about 1 cup) 🧅
  • 4 garlic cloves, minced 🧄
  • 1 teaspoon turmeric powder 🌿
  • 2 cups (370 g) basmati rice or any long-grain rice, rinsed and drained 🍚
  • 3 cups chicken stock or vegetable stock 🥣
  • ½ teaspoon salt or to taste 🧂
  • 1-2 tablespoons fresh lemon juice 🍋
  • Fresh parsley or cilantro leaves for garnish 🌿

Instructions:

  1. Sauté the Aromatics: In a medium saucepan or pot, melt the butter or ghee over medium heat. Add the finely diced onion and sauté for 3-4 minutes, or until softened. Then, add the minced garlic and cook for an additional minute until fragrant. 🧅🧄
  2. Incorporate Turmeric and Rice: Stir in the turmeric powder, ensuring it’s well distributed throughout the onions and garlic. Add the rinsed and drained rice, stirring to combine. Let it cook for about a minute, allowing the rice to lightly toast. 🌿🍚
  3. Simmer with Stock: Pour in the chicken or vegetable stock, season with salt, and give it a good mix. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until the liquid is absorbed. 🥣🧂🔥
  4. Finish with Lemon and Herbs: Remove the pot from the heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, drizzle with fresh lemon juice, and garnish with parsley or cilantro leaves. 🍋🌿
  5. Serve and Enjoy: Your Garlic Turmeric Rice is ready to be served! Pair it with your favorite protein and enjoy the burst of flavors. 🍽️😋
