Ingredients
2 tablespoons unsalted butter or ghee 🧈
1 medium onion, finely diced (about 1 cup) 🧅
4 garlic cloves, minced 🧄
1 teaspoon turmeric powder 🌿
2 cups (370 g) basmati rice or any long-grain rice, rinsed and drained 🍚
3 cups chicken stock or vegetable stock 🥣
½ teaspoon salt or to taste 🧂
1–2 tablespoons fresh lemon juice 🍋
Fresh parsley or cilantro leaves for garnish 🌿

Instructions
1️⃣ In a medium saucepan or pot, melt butter or ghee over medium heat. Add the onion and sauté for 3-4 minutes or until softened. Then, add the garlic and cook for 1 minute or until fragrant. 🧅🧄
2️⃣ Add turmeric powder and stir to combine. Mix in the rice and stir to combine. Cook for about 1 minute or until lightly toasted. 🌿🍚
3️⃣ Add the stock, salt and pepper. Mix well and bring to a boil. Once it starts to boil, reduce the heat to low, cover and simmer for 15 minutes or until the water has been absorbed. 🥣🧂🔥
4️⃣ Remove from the heat and set aside for 5 minutes before fluffing the rice with a fork. 🍚🍴
5️⃣ Drizzle with lemon juice and garnish with fresh parsley or cilantro leaves. 🍋🌿
6️⃣ Serve and enjoy! 🍽️😋
