Ingredients
2 tablespoons unsalted butter or ghee π§
1 medium onion, finely diced (about 1 cup) π§
4 garlic cloves, minced π§
1 teaspoon turmeric powder πΏ
2 cups (370 g) basmati rice or any long-grain rice, rinsed and drained π
3 cups chicken stock or vegetable stock π₯£
Β½ teaspoon salt or to taste π§
1–2 tablespoons fresh lemon juice π
Fresh parsley or cilantro leaves for garnish πΏ

Instructions
1οΈβ£ In a medium saucepan or pot, melt butter or ghee over medium heat. Add the onion and sautΓ© for 3-4 minutes or until softened. Then, add the garlic and cook for 1 minute or until fragrant. π§ π§
2οΈβ£ Add turmeric powder and stir to combine. Mix in the rice and stir to combine. Cook for about 1 minute or until lightly toasted. πΏπ
3οΈβ£ Add the stock, salt and pepper. Mix well and bring to a boil. Once it starts to boil, reduce the heat to low, cover and simmer for 15 minutes or until the water has been absorbed. π₯£π§π₯
4οΈβ£ Remove from the heat and set aside for 5 minutes before fluffing the rice with a fork. ππ΄
5οΈβ£ Drizzle with lemon juice and garnish with fresh parsley or cilantro leaves. ππΏ
