- 1/4 cup molasses (3oz/85g)
- 1/2 cup milk (dairy or plant-based)
- 1 tsp milk, for brushing
- 1 cup powdered sugar
- 2 tbsp melted butter or vegan butter
- 1 tbsp maple syrup
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 425°F, setting the stage for a quick, crisp baking.
- In a large bowl, blend the flour, baking powder, ginger, cinnamon, cloves, salt, and 2 tablespoons of sugar.
- Use a pastry cutter or fork to cut the cold cubed butter into the dry ingredients until achieving a coarse, pea-sized crumb consistency.
- Stir in the molasses and milk until the mixture is just combined, taking care not to overmix.
- Turn out the dough onto a lined or greased baking tray, flattening it into a 3/4 inch thick circle. Brush the top with milk and sprinkle evenly with sugar.
