1 cup (226g) unsalted butter, softened
½ cup (57g) powdered sugar
1 teaspoon vanilla extract
½ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon ground cloves
1 tablespoon molasses
2 ¼ cups (279g) all-purpose flour
Extra powdered sugar for rolling


Instructions

Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
Cream the butter using an electric mixer until it becomes fluffy, about 20 seconds.
Add powdered sugar, vanilla, salt, cinnamon, ginger, nutmeg, allspice, cloves, and molasses. Mix until the mixture is smooth and fully combined.
Gradually add flour and mix until the dough comes together. It may appear crumbly at first, but keep mixing until it forms a smooth cookie dough. This might take a few minutes.
Scoop 1 tablespoon of dough and place each portion onto the prepared cookie sheet.
Bake the cookies for 10-12 minutes, until the bottoms are just slightly browned.
Remove from the oven and allow to cool for a minute, just until you can handle them.
Fill a small bowl with powdered sugar and roll each cookie in the sugar until coated. Place on a rack to cool. Once the cookies are fully cooled, you may want to re-roll them in more powdered sugar for extra sweetness.
