Ingredients
1 and 3/4 cups flour
1 cup old-fashioned oats
1/4 teaspoon salt
1 and 1/2 teaspoons cinnamon
1 and 1/2 teaspoons baking powder
1 cup sugar
3/4 cup vegetable oil
2 eggs, beaten
1/2 cup plain nonfat Greek yogurt
1 cup applesauce
1 teaspoon vanilla
Glaze:
2/3 cup powdered sugar
1/4 cup applesauce
Instructions
Preheat the oven to 350°F (175°C) and grease two 8 1/2×4 1/2″ loaf pans.
In a large bowl, mix together flour, oats, salt, cinnamon, and baking powder. Set aside.
In another bowl, whisk together sugar, oil, eggs, yogurt, applesauce, and vanilla.
Fold the dry ingredients into the wet ingredients by hand until just combined, about 15 strokes.
Divide the batter evenly between the two loaf pans.
Bake for 41-45 minutes or until a toothpick inserted in the center comes out mostly clean.
Let the loaves rest in the pans for 5 minutes, then turn out onto a cooling rack with waxed paper underneath.
Whisk together the glaze ingredients and spoon evenly over both loaves. Allow to set before slicing.
