Description
This Glazed Strawberry Bread is the ultimate treat for anyone who loves the combination of sweet fruit and a tender loaf. The bread itself is moist and fluffy, bursting with fresh strawberry flavor, while the glaze adds just the right amount of sweetness and a beautiful finish.
Ingredients
For the Bread:
¾ cup granulated sugar
½ cup milk
½ cup vegetable oil
1 egg
1 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
¼ tsp salt
2 cups strawberries, diced
2 Tbsp all-purpose flour (for coating strawberries)
For the Glaze:
2 cups powdered sugar
2 Tbsp butter, melted
½ cup strawberries, diced
½ tsp vanilla extract
Instructions
Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.
Prepare the batter:
In a medium-sized bowl, whisk together the granulated sugar, milk, vegetable oil, egg, and vanilla extract until well combined. Add the salt and baking powder, then slowly mix in the flour, stirring just until the batter is smooth and all ingredients are incorporated.
Fold in the strawberries:
Toss the diced strawberries with 2 tablespoons of flour to coat them evenly. Gently fold the flour-coated strawberries into the batter.
Bake the bread:
Pour the batter into the prepared loaf pan. Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center of the bread comes out clean. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Prepare the glaze:
While the bread is cooling, prepare the glaze. In a small bowl, combine the powdered sugar, melted butter, diced strawberries, and vanilla extract. Stir until the mixture is fully combined and smooth. (Note: If the glaze is too thick, you can thin it with a little more melted butter or a splash of milk.)
Glaze the bread:
Once the bread is completely cool, drizzle the glaze evenly over the top. Allow the glaze to set before slicing and serving.
