Ingredients
For the Gluten-Free Sugar Cookies:
¼ cup maple syrup
3 tablespoons unsalted butter, softened
1 large egg
1 tablespoon lemon juice
1 teaspoon vanilla extract
2 cups blanched almond flour
⅓ cup coconut flour
½ teaspoon baking soda
¼ teaspoon kosher salt
For the Frosting:
5 oz whipped cream cheese
½ cup plain Greek yogurt
3 tablespoons maple syrup
Juice of 1 lemon (about 1 tablespoon)
1 teaspoon vanilla extract
For Topping:
Assorted fresh fruit (e.g., strawberries, blueberries, mandarin oranges, kiwi)
Instructions
Make the Cookie Dough: In a medium-sized mixing bowl, cream together the maple syrup and butter. Add the egg, vanilla, and lemon juice and mix. In a separate bowl, combine the dry ingredients (almond and coconut flours, baking soda, salt). Gradually mix the dry ingredients into the wet ingredients to form a thick dough.
Form and Bake the Cookies: On a floured surface, roll the dough into a ball or disc. Flatten the dough into a ¼-inch thick circle using a floured rolling pin. Use a cookie cutter to cut out circle shapes. Place cookies on a lined baking sheet and bake at 350°F for 12-14 minutes. Let cool.
Make the Frosting: Combine all frosting ingredients in a bowl and mix until light and fluffy.
Assemble: Cut the fruit into small pieces. Spread frosting on each cookie and top with fruit.
Serve: Enjoy immediately or store in an airtight container in the refrigerator.
