Ingredients
1 pound ground beef π
12 ounces rice noodles or noodles of choice π
ΒΌ cup low sodium soy sauce or tamari π₯’
ΒΌ cup gochujang paste πΆοΈ
2 tablespoons coconut cream π₯₯
2 teaspoons tomato paste π
2 tablespoons water π§
2 tablespoons honey or brown sugar π―
1 tablespoon toasted sesame oil πΎ
1 tablespoon rice vinegar π
2 teaspoons minced garlic π§
1 teaspoon fresh grated ginger π«
Β½ teaspoon red pepper flakes (more or less as desired for spice) πΆοΈ
Instructions
1οΈβ£ Bring a pot of salted water to a boil and cook noodles according to package instructions. Toss with 2 tablespoons of butter after cooking and let melt. ππ§
2οΈβ£ Add the ground beef to a large skillet and sautΓ© until cooked through. ππ³
3οΈβ£ Meanwhile, whisk together all remaining ingredients in a bowl and set aside. There may be some chunks of coconut cream, but it will melt once combined with the noodles. π₯π₯₯
4οΈβ£ When the noodles are done, drain and rinse them, then add back to the pot. Add in about half of the sauce and toss to combine. ππ₯’
5οΈβ£ Add in the ground beef and the rest of the sauce. Toss until well coated and let the flavors combine over low heat for a few minutes. πππ₯
6οΈβ£ Serve with chopped scallions, sesame seeds, cilantro, and/or red pepper flakes. Enjoy! πΏπΆοΈπ
