These Beef Chimichangas are a sumptuous combination of tender Mexican shredded beef wrapped in a crispy tortilla, generously topped with a homemade green chili sour cream sauce. This dish brings the vibrant flavors of Mexican cuisine right to your kitchen, perfect for a family dinner or a festive gathering.

1 recipe Mexican Shredded Beef (click for recipe)
6 burrito-size tortillas (10-inch)
1 cup freshly shredded sharp cheddar cheese
Optional: ¼ cup cilantro lime rice
Optional: ¼ cup black or pinto beans
Green Chili Sour Cream Sauce:

2 tbsp olive oil
1 tbsp unsalted butter
3 tbsp flour
2 cups low sodium chicken broth
½ tsp cumin
½ tsp chili powder
¼½ tsp salt
¼ tsp pepper
¼ tsp garlic powder
¼ tsp onion powder
½ 4 oz. can mild chopped green chilies
½ cup shredded sharp cheddar cheese
½ cup sour cream
1 tbsp lime juice
Hot sauce or cayenne pepper to taste
Optional Toppings:

Pico de gallo
Guacamole
Salsa
Sour cream
Hot Sauce


Instructions

Prep Beef: Prepare Mexican Shredded Beef as per recipe directions. Refrigerate in juices if made ahead, and drain before use.
Assemble Chimichangas: Preheat oven to 400°F. Line a baking sheet with foil and a rack. On each tortilla, layer optional rice and beans, add ½ cup shredded beef and cheese. Roll burrito style, placing seam side down on the baking sheet.
Bake: Brush with olive oil. Bake for 18-20 minutes until golden. Optionally broil for crispier texture.
Make Sauce: In a saucepan, melt butter in olive oil. Add flour and cook for 2 minutes. Gradually add broth and spices, simmer until thick. Remove from heat; add chilies, cheese, sour cream, and lime juice. Season with hot sauce to taste.
Serve: Top chimichangas with sauce and any desired toppings.
