Ingredients

Scale

2 cups whole milk
3 egg yolks
3 Tbsp sugar
1/2 cup cornstarch
2 Tbsp butter
1/2 cup bread crumbs
Oil for frying
Nonstick square pan, parchment lined or silicone mold

Instructions

Separate the yolks from two eggs.
Whisk the yolks until they lighten in color, then blend in the sugar.
On low speed, gradually incorporate 1 1/2 cups of milk.
Cooking the Custard:
4. Mix 1/4 cup of milk with the cornstarch in a separate bowl until smooth.

Heat a wide saucepan on medium-low, pour in the milk and egg mixture, and warm without boiling, stirring continuously.
Add the butter, then slowly incorporate the milk-starch mixture, stirring constantly to avoid sticking.
Continue stirring until the mixture thickens to a custard-like consistency.
Forming:
8. Pour the custard into a prepared mold, smoothing the top with a spatula.

Allow to cool at room temperature, then refrigerate for 2-3 hours until firm.
Frying:
10. Once firm, cut the custard into bite-sized cubes.

Process the bread crumbs until fine, seasoning with a pinch of salt and pepper if desired.
Coat each custard cube first in egg yolk, then roll in the bread crumbs.
Deep fry until golden and crispy.
