1 tbsp fresh lemon juice
Salt and finely ground pepper
Crispy Pan-Fried Fish:
2 x thin white fish fillets (120-150g / 4-5oz each), skinless boneless
Salt and pepper
2 tbsp white flour
2 tbsp oil (canola recommended)
Serving:
Lemon wedges
Finely chopped parsley (optional)


Instructions

Lemon Butter Sauce:

In a light-colored saucepan or small skillet over medium heat, melt the butter. Whisk occasionally until it turns golden brown and emits a nutty aroma, about 3 minutes. Immediately remove from the heat and transfer to a small bowl.
Stir in the lemon juice, salt, and pepper. Adjust the seasoning to taste after cooling slightly. The sauce will remain pourable for 20-30 minutes.
Crispy Pan-Fried Fish:

Pat the fish dry with paper towels, season with salt and pepper, then dredge in flour, shaking off any excess.
Heat the oil in a non-stick skillet over high heat. Once shimmering, add the fish and cook for 1 1/2 minutes on each side, until golden and crispy. Adjust the cooking time for thicker fillets as needed.
