Greek Chicken Souvlaki

Ingredients:

  • 3 cloves garlic
  • 2 medium lemons, divided
  • 3 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon honey
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 4 to 6 skewers
  • Vegetable oil for grilling
  • 2 medium plum tomatoes
  • 1/2 medium English cucumber
  • 1/4 small red onion
  • 1/3 cup pitted kalamata olives (about 10)
  • 4 (6-inch) pita breads
  • Tzatziki sauce, for serving

Directions:

  1. Prepare the marinade by finely grating garlic and the zest of 1 lemon into a bag or dish. Juice the 2 lemons and add to the marinade along with olive oil, oregano, honey, salt, and black pepper. Combine well.
  2. Cut the chicken into 1-inch pieces and add to the marinade. Let sit for at least 30 minutes at room temperature, or up to 3 hours refrigerated.
  3. Prepare the grill for medium-high heat and oil the grates. Thread chicken onto skewers and grill for about 4-5 minutes per side or until cooked through.
  4. Slice tomatoes, cucumber, and red onion for garnish. Arrange on a platter with halved olives.
  5. Warm pita breads on the grill and assemble by topping with chicken, vegetables, olives, and tzatziki.
