Description

Embark on a culinary journey to the heart of the Mediterranean with this Greek-Style Baked Cod. Each bite of this dish promises a burst of zesty lemon and aromatic garlic, paired perfectly with the mild, flaky texture of cod. The blend of spices, including coriander, paprika, and cumin, infuses the fish with a depth of flavor that’s both comforting and invigorating.

Ingredients

Scale

1.5 lb Cod fillet pieces (46 pieces)
5 garlic cloves, peeled and minced
1/4 cup chopped fresh parsley leaves
Lemon Juice Mixture:

5 tbsp fresh lemon juice
5 tbsp Private Reserve extra virgin olive oil
2 tbsp melted butter
For Coating:

1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper

Instructions

Preheat oven to 400 degrees F.
Combine lemon juice, olive oil, and melted butter in a shallow bowl. Reserve.
In another bowl, mix flour, spices, salt, and pepper. Set near the lemon juice mixture.
Pat fish fillets dry. Dip in the lemon juice mixture, then in the flour mixture. Shake off excess flour.
Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat. Sear fish on each side for a couple of minutes to add color, but do not fully cook. Remove from heat.
To the remaining lemon juice mixture, add minced garlic and mix. Drizzle over the fish fillets.
Bake in the preheated oven until the fish flakes easily with a fork (about 10 minutes, but start checking earlier). Remove from oven and sprinkle with chopped parsley.
Serving Suggestions: Serve immediately with Lebanese rice, Mediterranean chickpea salad, or a traditional Greek salad.
