Ingredients
For the Chicken:
4 chicken breasts
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
4 slices mozzarella cheese
4 slices tomato
2 tablespoons fresh basil, sliced
For the Balsamic Reduction:
½ cup balsamic vinegar
2 tablespoons light brown sugar
Instructions
Preheat your grill to medium-high heat. Season the chicken breasts on both sides with Italian seasoning, garlic powder, onion powder, salt, and pepper.
Spray the grill with non-stick cooking spray and cook the chicken breasts until they are almost fully cooked, about 6-7 minutes per side depending on thickness.
Place a slice of mozzarella cheese on each chicken breast. Close the grill and cook for an additional 2-3 minutes, or until the cheese has melted.
Remove the chicken from the grill and top each breast with a slice of tomato and sliced fresh basil.
Drizzle the chicken with the balsamic reduction before serving. Serve immediately and enjoy!
For the Balsamic Reduction:
In a small saucepan, combine the balsamic vinegar and light brown sugar. Bring to a simmer over medium heat.
Continue to simmer for about 10 minutes, or until the sauce has reduced by half and has a syrupy consistency. Keep warm until ready to use.
