- ¼ cup freshly squeezed lemon juice
- 3 tablespoons honey
- 3 cloves of garlic, minced

- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 lb. shrimp, (16–20 or 21–25 count), peeled and deveined

Instructions
- Soak the Skewers If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.
- Make the Marinade In a bowl, combine the olive oil, lemon zest, lemon juice, honey, minced garlic, paprika, optional red pepper flakes, parsley, salt, and pepper. Whisk these ingredients together until well blended. Add the shrimp, toss to coat thoroughly, cover with plastic wrap, and marinate in the refrigerator for 30 minutes.
- Preheat the Grill Prepare your grill according to the type: – For a gas grill, turn half of the burners to high and heat to 400°F for about 10 minutes. – For a charcoal grill, light a chimney of charcoal, and once ashed over, spread evenly and heat to 400°F. – For a stovetop grill pan, place it over medium heat until it gets hot.
- Skewer the Shrimp Thread the marinated shrimp onto the pre-soaked skewers, with about 5-6 shrimp per skewer, starting from the thickest part of each shrimp.
- Grill the Shrimp – On gas or charcoal grills, grill the skewers directly over the heat source for about 2-3 minutes or until the edges turn pink. Flip and continue to grill for another 2 minutes or until lightly charred. – On a stovetop grill pan, cook for about 3 to 3 ½ minutes on each side.
