¼ cup olive oil
¼ cup lemon juice, plus zest from the lemons
2 teaspoons oregano
4 garlic cloves, pressed
½ teaspoon salt
¼ teaspoon black pepper
Parsley or cilantro, for serving
Lemon wedges, for serving


Instructions

Pat the chicken dry and pound any thick portions to ensure even cooking. In a bowl or resealable freezer bag, combine the olive oil, lemon juice, lemon zest, oregano, garlic, salt, and pepper. Add the chicken and toss well to coat. Marinate in the refrigerator for at least 30 minutes.
Preheat your grill or grill pan to medium-high heat. Place the marinated chicken on the grill and cook for 5-7 minutes. Use tongs to flip the chicken over and continue cooking until the juices run clear, approximately 5-7 more minutes. Discard any remaining marinade.
Remove the chicken from the grill, sprinkle with fresh parsley or cilantro, and serve with lemon wedges and your favorite vegetables, if desired.
