  • 1½ cups ricotta cheese
  • ¼ cup Parmigiano Reggiano (Parmesan), grated
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper, to taste
  • 24 fresh basil leaves
  • 24 slow roasted tomato halves

Instructions

  1. Grill the Zucchini: Lightly brush each zucchini slice with oil. Grill over medium-high heat for about 1 minute per side, or until just tender and grill-marked. Once done, set the slices aside to cool slightly.
  2. Prepare the Ricotta Filling: In a medium bowl, combine the ricotta cheese, grated Parmesan, lemon zest, chopped basil, salt, and pepper. Stir until all ingredients are well blended, creating a creamy and aromatic filling.
  3. Assemble the Rollups: Spread a thin layer of the ricotta mixture evenly over each zucchini slice. Place a fresh basil leaf and a slow roasted tomato half on one end of each slice. Starting from the end with the tomato and basil, roll up the zucchini slice tightly.
