Description

Ground Beef Teriyaki Rice Bowls are a simple yet satisfying meal, combining tender ground beef, vibrant vegetables, and a rich homemade teriyaki sauce. The savory flavor of the sauce melds beautifully with the sweetness of the carrots and the earthy crunch of the broccoli, all served over a bed of fluffy rice.

For the Teriyaki Sauce:
1/2 cup low-sodium soy sauce
1/3 cup water
2 tablespoons granulated sugar
2 tablespoons brown sugar
2 tablespoons rice vinegar
1 teaspoon fresh ginger paste (or ½ teaspoon dried ginger)
1 teaspoon chopped garlic (or garlic paste)
2 tablespoons warm water
1 tablespoon cornstarch
For the Ground Beef Teriyaki:
1 teaspoon sesame oil
1 lb lean ground beef (93/7)
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon salt
1½ cups chopped broccoli
1 cup thinly sliced carrots (baby carrots are ideal)


Instructions

In a medium saucepan over medium-high heat, combine the soy sauce, water, granulated sugar, brown sugar, rice vinegar, ginger, and garlic. Whisk well and bring to a boil.
In a small bowl, mix the warm water and cornstarch until fully dissolved. Once the sauce is boiling, slowly stir in the cornstarch slurry. Reduce the heat to medium-low and let the sauce simmer until thickened.
In a large skillet over medium-high heat, cook the ground beef with sesame oil, garlic powder, onion powder, and salt. Crumble the beef until browned and fully cooked, then drain excess fat.
Add the chopped broccoli, sliced carrots, and the thickened teriyaki sauce to the skillet. Stir to combine and bring to a boil. Once boiling, lower the heat to medium, cover, and let simmer for 15 minutes.
When the vegetables are tender to your liking (we recommend 15 minutes for soft veggies), serve the beef teriyaki mixture over cooked rice, noodles, or brown rice. Garnish with sliced green onions for an extra touch of flavor.
