Ingredients
4 boneless, skinless chicken breasts
1 cup soy sauce
1/2 cup brown sugar
2 cloves garlic, minced
1 tsp ginger, grated
1/2 cup pineapple juice
1 tbsp cornstarch
1 tbsp water
1/2 cup chopped green onions
1/2 cup canned pineapple chunks (optional)
Instructions
In a mixing bowl, combine soy sauce, brown sugar, garlic, ginger, and pineapple juice.
Place chicken breasts in the marinade and let sit for at least 30 minutes, or overnight for deeper flavor.
Preheat grill or skillet over medium heat.
Remove chicken from marinade, reserving the liquid.
Grill chicken on each side until golden brown and cooked through, about 6-7 minutes per side.
Meanwhile, pour the reserved marinade into a saucepan. Mix cornstarch and water, and add to the saucepan. Bring to a boil and cook until the sauce thickens.
Serve chicken topped with the thickened teriyaki sauce, garnished with green onions and pineapple chunks.
