Ingredients
Dressing:
3 tablespoons freshly squeezed lime juice
¼ cup extra virgin olive oil
2 tablespoons honey
Salt and pepper to taste
Salad:
5 oz arugula
1 ripe mango, peeled, pit removed, and diced into bite-sized pieces
1 avocado, peeled, cored, and diced
¼ cup thinly sliced red onions
⅓ cup toasted pine nuts
Instructions
In a medium, high-sided bowl or in a mason jar, combine lime juice, olive oil, and honey. Whisk with a fork until emulsified.
In a large serving bowl, combine arugula, diced mango, diced avocado, and red onions.
Drizzle with the salad dressing (adjust the amount to your liking) and toss to combine. Top with toasted pine nuts. Season with salt and pepper, if desired.
