Healthy Plum Cake with Lemon Cashew Icing π°
Ingredients
For the cake:
1/2 lb. (225 g) fresh plums, pitted and cut into wedges π
1 cup (226 g) butter, softened to room temperature π§
1 cup (140 g) coconut sugar π―
4 eggs, at room temperature π₯
1 cup (150 g) whole wheat flour πΎ
1 cup (100 g) almond flour π°
2 teaspoons baking soda π₯
Β½ tablespoon cinnamon πΏ
Β½ cup dates, chopped π΄
ΒΌ cup cashews, halved π°
For the icing:
1/4 cup cashew butter (homemade or store-bought) π°
2 tablespoons maple syrup π
1 tablespoon fresh lemon juice π
1 teaspoon almond milk, or more as needed π₯
Instructions
1οΈβ£ Preheat the oven to 325Β°F (160Β°C). Line the bottom of a 9-inch springform pan with baking paper; butter the sides. Set aside. π₯
2οΈβ£ In a large bowl, beat the butter and coconut sugar until the mixture is light in color and fluffy. π§π―
3οΈβ£ Add the eggs, one at a time, beating well in between each addition. π₯π₯π₯π₯
4οΈβ£ Fold in the whole wheat flour, almond flour, baking soda, and cinnamon until well integrated. πΎπ°π₯πΏ
5οΈβ£ Stir in the chopped dates. π΄
6οΈβ£ Pour the cake batter into the prepared pan and smooth the top. Arrange the sliced plums in a circle on top. Slightly press them into the batter. π°π
7οΈβ£ Sprinkle the top with halved cashews. π°
8οΈβ£ Bake the cake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean. β³
