12 oz spicy Italian sausage
1 tablespoon olive oil
1 tablespoon Italian seasoning
1 teaspoon paprika (regular or smoked)
1 large sweet potato (or 2 small), peeled and cubed
5 cloves garlic, minced
¼ teaspoon red pepper flakes
1 tablespoon tomato paste
6 cups water
8 oz three-cheese tortellini (refrigerated)
4 oz fresh spinach
½ cup heavy cream
4 tablespoons fresh thyme
Instructions
Heat olive oil in a large, high-sided pot over medium heat. Add crumbled sausage and cook until browned, stirring frequently. Drain excess grease.
Add Italian seasoning, paprika, sweet potato, garlic, red pepper flakes, and tomato paste. Stir to combine.
Pour in water and bring the mixture to a boil, ensuring the tomato paste is fully dissolved.
Reduce heat to a simmer, cover, and cook for 15 minutes until the sweet potatoes are tender.
Add tortellini and continue to simmer for 10 minutes, or according to the package instructions.
Stir in spinach until wilted and remove from heat.
Mix in heavy cream and season with salt and additional red pepper flakes if needed. Garnish with fresh thyme before serving.
