Fritter Batter:
1 tbsp butter, melted
1/4 cup sugar
2 eggs
1 cup flour
2 tsp baking powder
1/2 tsp salt
1/4 cup milk
1 1/2 cups fresh blueberries
Glaze:
1/4 cup butter
1 1/2 cups powdered sugar
1 tsp vanilla extract
1 1/2 tbsp milk


Instructions

In a large bowl, use a hand mixer to combine the melted butter, sugar, and eggs until the mixture is smooth and creamy.
In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the egg mixture. The batter will be thick at this point.
With the mixer running, slowly add the milk to the batter until it reaches a thinner consistency.
Gently fold in the fresh blueberries, being careful not to crush them.
Heat oil in a deep skillet or fryer to a temperature between 340-350°F (170-175°C).
Drop 1/4 cup portions of the batter into the hot oil, frying each side until golden brown, about 2-3 minutes per side. Repeat with the remaining batter.
For the glaze, beat the butter, powdered sugar, vanilla extract, and milk together in a medium bowl until smooth and creamy.
Once the fritters are done frying, place them on a paper towel-lined plate to drain excess oil. Spoon the glaze over each fritter while they are still warm for the perfect finish.
