2 tbsp baking soda

Instructions

Yeast Mixture: In a stand mixer with a hook attachment, combine yeast, warm water, and sugar. Wait until frothy, then add salt and 1 tbsp melted butter.

Dough Formation: Gradually add flour, kneading at the lowest setting. If the dough bounces back when pressed, it’s ready. Knead for 5 minutes until smooth. Let it rest for 15 minutes under a damp towel.

Baking Soda Bath: Boil water with baking soda. Cool slightly in a shallow dish.

Shaping: Divide the dough into 8, roll into long ropes, and form pretzels. Bathe each for 2 minutes, then place on baking sheets. Sprinkle with coarse salt.

Baking: Bake for 8-9 minutes until golden. Brush with melted butter immediately after baking.
