4 tbsp unsalted butter, cold
12 tbsp ice water, as needed


Instructions

Preheat Oven: Preheat your oven to 350°F (180°C).
Prepare Dough: In a food processor, combine the shredded cheese, flour, and cold butter. Pulse the mixture in short increments until it resembles a grainy, sand-like texture.
Form the Dough: Add 1 to 2 tablespoons of ice water to the food processor and pulse until the mixture begins to come together into a dough. Be careful not to over-process the dough; pulse just enough for it to start forming. The amount of water needed may vary based on your environment.
Knead and Refrigerate: Transfer the dough onto a surface and gently knead it until it comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
Roll and Cut: Roll out the dough on a lightly floured surface to a thickness of ⅛ to ¼ inch. Use a small cookie cutter to cut out shapes from the dough, or use a pizza slicer to cut the dough into small square-shaped crackers. Gather the scraps, re-roll the dough, and continue cutting shapes until all the dough is used.
