Ingredients
3.5 lbs Yukon Gold potatoes, about 4 large potatoes
3.5 teaspoons salt, plus more to taste
6 tablespoons salted butter, at room temperature
1/2 cup sour cream
1 cup half & half
1/2 teaspoon black pepper
Instructions
Whisk together the half & half and sour cream in a small bowl. Let it reach room temperature.
Peel the potatoes and rinse them briefly to remove any residue. Cut into 3/4-inch slices.
In a large pot, cover potatoes with cold water. Bring to a gentle boil, then add 3.5 teaspoons of salt.
Cook for about 25 minutes until potatoes are fork-tender.
Drain and let sit in the pot for 5 minutes to release steam.
Add butter and allow it to melt into the potatoes.
Drizzle most of the dairy mixture over the potatoes, add black pepper, and mash until creamy. Adjust with remaining dairy for creaminess.
Taste and adjust seasoning, then serve.
