  • 6 ounce can tomato paste
  • 15 ounces water
  • 2 cans kidney beans, drained and rinsed (15-ounce cans)
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon cayenne pepper
  • ½ tablespoon salt
  • 1 teaspoon white pepper
  • ½ teaspoon baking soda (optional)

Directions:

  1. Sauté the Vegetables: In a large dutch oven, sauté the diced green peppers and onions until they become translucent and begin to caramelize.
  2. Add Seasonings: Add all the seasonings (except for the baking soda) and cook for 1 to 2 minutes, stirring continuously to prevent burning.
  3. Cook the Meat: Add the ground beef or turkey and cook until just browned, leaving some pink remaining.
  4. Incorporate Tomato Products: Stir in the tomato sauce, diced tomatoes, water, and tomato paste. Bring the mixture to a simmer over medium-low heat and cook for 15 minutes.
  5. Add the Beans: Mix in the kidney beans and continue to simmer.
  6. Optional Baking Soda: Add the baking soda, stirring continuously as the mixture bubbles, then reduce heat and simmer until thickened.
