1/3 cup unsalted butter
1/4 cup honey
4 large cloves garlic, crushed
2 limes, juiced
2 1/2 pounds (1.2 kg) side of salmon
Sea salt, to taste
Cracked pepper, to taste (optional)
Lime slices (to serve)
1/4 cup fresh chopped parsley, divided


Instructions

Position a rack in the middle of the oven. Preheat oven to 375°F (190°C). Line a baking sheet with a large piece of foil, big enough to fold over and seal the salmon.
In a small saucepan, melt the butter over low-medium heat. Stir in the honey, garlic, and lime juice until the honey is fully dissolved and the mixture is uniform.
Place the salmon on the lined baking sheet. Evenly pour the honey-lime mixture over the salmon. Season with a generous amount of salt (about 2 teaspoons) and cracked pepper. Sprinkle with 2 tablespoons of parsley.
Fold the foil over the salmon to enclose it completely and seal in the sauce.
Bake for 15-18 minutes, or until the salmon is cooked through, depending on its thickness. Switch the oven to broil and broil for 2-3 minutes to caramelize the top.
Garnish with remaining parsley and serve with fresh lime slices.
