Ingredients
2 tablespoons avocado oil or canola oil
¼ teaspoon salt
¼ teaspoon ground pepper
2 pounds medium beets, peeled, halved, and cut into small wedges
2 tablespoons honey
2 tablespoons lemon juice
Instructions
Preheat your oven to 425°F (220°C) and place a large rimmed baking sheet inside to heat up.
In a large bowl, mix the oil, salt, and ground pepper.
Add the beet wedges to the bowl and toss well to coat them evenly with the seasoned oil.
Carefully remove the hot baking sheet from the oven and spread the coated beets onto the sheet. Roast the beets for 20-25 minutes until they’re almost tender.
Remove the baking sheet from the oven and drizzle the beets with honey and lemon juice. Toss the beets to coat them well.
Return the beets to the oven and continue roasting for another 5 minutes until they are fully tender.
