- 1/2 tsp vanilla extract
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted

Instructions
- Step 1: Prepare the Crust Preheat your oven to 325F (163C). Grease a 9-inch springform pan and line the bottom with parchment paper. In a bowl, mix graham cracker crumbs, brown sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of the pan. Bake for 8-10 minutes, then let it cool.
- Step 2: Make the Cheesecake Filling In a large bowl, beat the cream cheese until smooth. Add both sugars and mix well. Incorporate eggs one at a time, followed by sour cream, heavy cream, vanilla, cinnamon, and nutmeg. Pour this mixture over the cooled crust, smoothing the top evenly.
- Step 3: Bake the Cheesecake Wrap the pan’s exterior with foil to prevent leaks and place it in a large roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan. Bake for 60-70 minutes. Once done, allow the cheesecake to cool in the oven with the door ajar for 1 hour, then transfer it to the refrigerator to chill for at least 4 hours or overnight.
