Ingredients
Scale
- 1 10 oz bag of Tostitos Scoops tortilla chips
- 1 8 oz block of cream cheese, softened
- 8 oz of shredded mozzarella cheese
- 1 large egg
- 1 15 oz can of sweet corn, drained
- 1 4 oz can of mild or medium green chiles
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 cup of grated Parmesan cheese for topping
Instructions
- Preheat the Oven: Start by preheating your oven to 425F (220C). This ensures the oven reaches the right temperature for baking the bites to perfection.
- Prepare the Baking Sheets: Lightly grease your baking sheets or line them with parchment paper. Arrange the tortilla chips on the sheets, making sure the cup side is up to hold the fillings.
- Mix the Ingredients: In a large bowl, mix together the softened cream cheese, shredded mozzarella, egg, drained sweet corn, green chiles, garlic powder, salt, and black pepper until combined well.
- Fill the Tortilla Chips: Scoop about 1 tablespoon of the cheese and corn mixture into each tortilla chip.
- Add the Topping: Sprinkle the grated Parmesan cheese generously over the filled chips to add a crispy, cheesy top layer once baked.
- Bake the Bites: Place the baking sheets in the oven and bake for 13-15 minutes. Look for the tops to turn golden and the cheese to be bubbling before removing from the oven.
- Serve: Allow the bites to cool slightly before serving them warm. They’re best enjoyed fresh from the oven!
