1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
2 large eggs
3 tablespoons whole milk or cream
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon

About 3 Granny Smith apples, peeled and thinly sliced (approximately 1 pound after slicing)
Confectioner’s sugar for dusting
For the Streusel Topping:
3/4 cup all-purpose flour
1/4 cup old-fashioned rolled oats
6 tablespoons unsalted cold butter, cut into small pieces
1/2 cup granulated sugar
For the Custard Sauce:
6 large egg yolks
6 tablespoons granulated sugar
1 1/2 cups whole milk (or use half-and-half or cream)
1 1/2 teaspoons vanilla extract


Instructions

Prepare the Custard Sauce:
Start by making the custard sauce ahead of time. Heat the milk over medium heat until it begins to simmer.
In a separate bowl, whisk together the egg yolks and sugar until well combined.
Slowly drizzle a little of the hot milk into the egg mixture while whisking constantly. Continue to add more hot milk, then pour the egg mixture back into the saucepan with the remaining hot milk.
Cook the mixture over medium heat, stirring constantly, until it thickens slightly and coats the back of a spoon. Be careful not to overcook, as it can curdle.
Once thickened, stir in the vanilla extract.
Strain the custard through a sieve to remove any lumps and transfer it to a heatproof jar or bowl. Place plastic wrap directly on the surface of the custard to prevent a skin from forming, then refrigerate until completely chilled.
Make the Streusel Topping:
In a bowl, blend the cold butter into the flour, sugar, and oats until the mixture becomes crumbly and coarse.
Refrigerate the streusel topping until ready to use.
Prepare the Cake:
Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs, one at a time, until well incorporated.
In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
Gradually fold the dry ingredients into the butter and sugar mixture, alternating with the milk or cream, until just combined.
Spoon the batter into the prepared springform pan, smoothing it out evenly.
Arrange the sliced apples on top of the batter in an even layer.
Sprinkle the streusel topping over the apples.
Bake the Cake:
Bake the cake in the preheated oven for 50-60 minutes, or until the top is lightly browned and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Allow the cake to cool slightly in the pan before removing it.
Dust the cake with confectioner’s sugar before serving.
Serve:
Slice the cake and serve it with the chilled custard sauce on the side.
