Ingredients
4 chicken breasts, bone-in with skin
1/4 cup olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh oregano, chopped
Salt and black pepper to taste
2 lemons, one juiced and one sliced
1/2 cup dry white wine
1/2 cup chicken broth
Instructions
Preheat oven to 400°F (200°C).
In a small bowl, mix olive oil, garlic, rosemary, thyme, oregano, salt, pepper, and lemon juice.
Rub the herb mixture under the skin of the chicken breasts.
Place the chicken in a roasting pan. Arrange lemon slices around the chicken.
Pour white wine and chicken broth into the pan.
Roast for 35-40 minutes, or until the chicken is golden brown and cooked through.
Baste occasionally with pan juices.
Serve hot, garnished with additional herbs if desired.
