Ingredients
16 ounces Italian sausage
1/2 medium onion, chopped finely
2 sticks celery, chopped finely
2 tablespoons flour
4 cloves garlic, minced
4 cups chicken broth
1 (28 ounce) can diced tomatoes with juices
1/2 teaspoon dried oregano
1 cup uncooked orzo
1 cup heavy/whipping cream
2 cups (packed) fresh baby spinach (optional)
Salt & pepper to taste
Instructions
In a large soup pot, sauté the sausage meat over medium-high heat, stirring occasionally, until browned, about 7-10 minutes.
Remove the sausage, drain on a paper towel-lined plate, and discard all but one tablespoon of fat from the pot.
Add onion and celery to the pot and cook for 4-5 minutes until softened.
Stir in flour and garlic, cook for 1 minute, stirring constantly.
Gradually add chicken broth, stirring to dissolve the flour.
Add tomatoes, oregano, and the browned sausage. Bring to a gentle boil over high heat.
Add orzo and cream, reduce heat to maintain a simmer, and cook for about 12 minutes, until orzo is tender, stirring often.
Stir in spinach and season with salt and pepper. Serve hot.
