Description

There’s something incredibly comforting about the combination of freshly baked pretzels, the sharp bite of cheddar, and the spicy kick of jalapeno. It’s a trio that promises not only a burst of flavor with every bite but also a warm, cozy feeling that only homemade snacks can provide.


Ingredients

1 1/4 cups warm water
2 1/2 teaspoons active dry yeast
1 tablespoon sugar
1/2 teaspoon salt
34 cups flour
2 medium jalapenos, seeded and finely minced
2 cups shredded cheddar cheese
4 cups very hot water
1/4 cup baking soda
1 egg + 2 tablespoons water
Coarse salt for sprinkling
2 tablespoons melted butter


Instructions

Preheat the oven to 450 degrees. Line a large baking sheet with parchment paper.
In a stand mixer fitted with the dough hook, combine the warm water, yeast, and sugar. Let stand for 5-10 minutes, or until frothy. Stir in the salt.
Add 3 cups of flour, mix to combine. Incorporate the jalapenos and cheese. Gradually add the remaining flour until the dough forms a slightly tacky ball (you may not need all the flour).
Dissolve the baking soda in 4 cups of very hot water in a large bowl. Whisk the egg and 2 tablespoons of water in a small bowl; set aside.
Divide the dough into four equal parts. Roll each part into a log, then cut into three pieces, yielding 12 pieces. Roll each piece into an 18-24 inch rope, fold in half and twist. Place on the baking sheet.
Dip each twist in the hot water solution for 30 seconds, return to the baking sheet, brush with egg wash, and sprinkle with coarse salt.
Bake for 8-10 minutes, until golden brown. Cool slightly, then brush with melted butter.
