  • 2 tbsp sriracha sauce
  • 1 tsp paprika
  • 1 clove garlic
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 3 large fresh jalapeno chillies
  • 2 cups extra tasty cheddar, grated
  • 1 cup parmesan, grated

Instructions

  1. Prepare the Spicy Yogurt Dip: Start by placing the Greek yogurt, sriracha sauce, paprika, and garlic in a food processor. Blitz the ingredients until they achieve a smooth consistency. Season with salt and pepper to taste, then refrigerate the dip until it’s time to serve.
  2. Prep for Baking: Preheat your oven to 180C (350F). Line two baking trays with baking paper to ensure the cheese rounds can be removed easily after baking.
  3. Mix the Cheeses: In a mixing bowl, thoroughly combine the grated cheddar and parmesan. This blend will form the base of your cheese rounds.
  4. Prepare the Jalapenos: Wearing gloves to protect your hands from the jalapeno oils, trim the ends off the chillies and carefully remove the seeds with a sharp knife. Slice the jalapenos into thin rings which will top each cheese round.
  5. Shape the Cheese Rounds: Using a tablespoon, scoop out portions of the cheese mixture onto the lined baking trays. Form rough rounds and press a jalapeno slice into the center of each. Ensure there’s a little space between each as they will spread during baking.
  6. Bake the Rounds: Bake in your preheated oven for approximately 8-10 minutes, or until you see the edges turn golden brown. Once baked, allow them to cool on the tray before transferring to a serving plate.
