- 1 1/4 cups cornmeal
- 3/4 cup all-purpose flour
- 1/3 cup white sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg, beaten
- 4 tablespoons melted butter
- 1 cup buttermilk
- 4 ounces cream cheese
- 3 jalapeños, deseeded and deveined
Instructions
- Preheat Oven and Prepare Muffin Pan Start by preheating the oven to 400 degrees Fahrenheit. Using baking spray, grease the cups of a muffin pan to prepare it for the batter.
- Combine Dry Ingredients In a large mixing bowl, stir together the cornmeal, flour, sugar, baking powder, and salt until everything is well mixed.
- Add Wet Ingredients To the dry ingredients, add the beaten egg, melted butter, and buttermilk. Whisk the mixture just until combined, being careful not to overmix.
- Fill Muffin Cups Spoon the batter into the prepared muffin pan, filling each cup halfway. Place about a tablespoon of cream cheese in the center of each, then continue to fill with batter until the cups are nearly full.
- Add Jalapeños and Bake Press two to three slices of jalapeño into the top of each muffin. Bake in the preheated oven for 15 to 18 minutes, or until the tops of the muffins are golden and spring back when touched lightly.
