1 slice of bread
1 egg
¼ ripe avocado
1 teaspoon pesto
Salt and pepper, to taste


Instructions

Boil the Egg: Bring a large saucepan of water to a boil over medium-high heat. Using a slotted spoon, carefully lower the egg into the boiling water. Cook for 7 minutes, adjusting the heat to maintain a gentle boil.
Toast the Bread: While the egg is cooking, toast the slice of bread to your desired level of crispness.
Prepare the Avocado: Once the bread is toasted, spread the ripe avocado evenly over the toast.
Cool and Peel the Egg: After 7 minutes, remove the egg from the boiling water and transfer it to a bowl of ice water. Let it chill for about 2 minutes. Peel the egg carefully once it’s cool enough to handle.
Assemble the Toast: Slice the peeled egg into quarters and place them on top of the avocado toast. Season with salt and pepper to taste.
Finish with Pesto: Drizzle the pesto over the top of the toast. Serve immediately and enjoy!
