For the shortbread crust:

2 cups almond flour
1/2 cup butter, melted (dairy-free if needed)
1/2 cup sugar-free powdered sugar
For the lemon filling:

1/4 cup butter, softened (dairy-free if needed)
1/2 cup lemon juice
1/2 cup sugar-free powdered sugar
5 large eggs
1 large egg yolk
1 1/2 tablespoons coconut flour


Instructions

Preheat oven to 350°F (180°C). Line an 8×8-inch baking pan with parchment paper.
In a mixing bowl, combine almond flour, melted butter, and powdered sugar for the crust. Press into the bottom of the prepared pan.
Bake for 15 minutes, or until golden. While it bakes, prepare the filling.
In another bowl, mix softened butter, lemon juice, and powdered sugar for the filling. Add eggs, egg yolk, and coconut flour, mixing until smooth.
Pour the filling over the baked crust and return to the oven for 20-22 minutes, or until the center is set but slightly jiggly.
Cool completely in the pan, then refrigerate for at least 2 hours before serving. Dust with additional powdered sugar before serving.
