½ cup heavy cream
5 tablespoons butter, softened
2 large eggs
1 teaspoon vanilla extract
½ cup powdered sweetener (20% off Lakanto with code MELISSA20)
1 ½ cups blanched almond flour
2 tablespoons psyllium husk powder
2 teaspoons baking powder
½ teaspoon nutmeg
½ teaspoon ginger
¼ teaspoon allspice
For the covering:
2 tablespoons butter, melted
1 teaspoon cinnamon
¼ cup granulated sweetener


Instructions

Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners.
In a medium bowl, use an electric mixer to cream together the butter, sweetener, and vanilla extract until smooth. Beat in the eggs and heavy cream.
In a separate bowl, whisk together all dry ingredients (excluding the topping ingredients). Gradually add the dry mixture to the wet ingredients, mixing continuously with the electric mixer until well combined.
Spoon the batter evenly into the muffin cups.
Bake for 18-20 minutes, or until the edges are golden and the muffins are set.
Allow the muffins to cool completely. Once cooled, brush each muffin with melted butter and roll in a mixture of cinnamon and granulated sweetener. Serve and enjoy!
