Instructions
1️⃣ In a large bowl, combine the ground lamb, chopped onion, minced garlic, ground allspice, ground cinnamon, ground cumin, ground coriander, salt, and black pepper. Mix well until all ingredients are evenly incorporated. 🍲
2️⃣ If using pine nuts, lightly toast them in a dry pan over medium heat until golden brown, then add to the lamb mixture. 🌲
3️⃣ Add the chopped parsley and olive oil to the lamb mixture and mix until well combined. 🌿
4️⃣ Preheat your grill to medium-high heat. 🔥
5️⃣ Shape the lamb mixture into long sausage-like shapes around skewers. Ensure the mixture is tightly packed around the skewers to prevent falling apart. 🍢
6️⃣ Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked through and slightly charred on the outside. ⏳
7️⃣ Serve the kibbeh-spiced lamb skewers hot with lemon wedges on the side for squeezing over. 🍋
